Thai Curry Noodle Soup

Chewy sweet potato noodles in a pungent & coconut-y Thai curry soup base that’s the perfect soul-soothing weeknight meal!

Thai food is one of my favorites and I always make sure to have a batch of homemade curry paste ready in the freezer for a quick weeknight dinner.

This noodle soup is such an easy & fuss free weeknight dinner. Sub in any Thai curry paste of your choice and it is just as easy & delicious! Add in any meat or tofu to the broth or leave out the dumplings. It’s so easy and customizable. Truly the perfect weeknight meal!


• 2 tbsp Thai curry paste (of your choice) • 2 cups thin coconut milk ( 1 cup thick + water) • 2 tsp coconut oil • 1/2 onion, large diced • 2 tsp palm sugar • 2 cloves of garlic, sliced • 1/2 inch ginger, julienned • 1/2 bell pepper, large diced • 1 tbsp cilantro, finely chopped • 2 spring onion greens, chopped • 1/4 - 1/2 tsp tamarind paste, optional • salt to taste • jalapeño slices, optional • toasted sesame seeds, optional • 1 pack of the noodle of your choice. I used sweet potato noodles (cooked as per the instructions) • dumplings or potstickers, optional (cooked as per instructions)


In a large deep bottom vessel heat up some coconut oil and sauté the onions, garlic, just half of the ginger, & bell peppers until barely soft. If you would like to add in some meat you can add it in before the onions and cook until just about half done. Make sure your meat is chopped into bite size pieces.

Add in the curry paste and cook until the raw flavor disappears and the oil starts to separate from the sides.

Add in the coconut milk, tamarind paste, palm sugar, salt, put a lid on the pot and allow to simmer till the vegetables (and meat) are fully cooked.

To serve, add your cooked noodles to a bowl add in your cooked dumplings to the side and spoon over your curry broth over it. Top with sesame seeds, cilantro, the remaining ginger, sliced jalapeños, & spring onion greens.

This soup base is so versatile, you can substitute any kind of curry paste you like (green, red, yellow, panang, or massaman)
